Pepper and Garlic Pork Chops

    Ingredients

    4 Five Star bone-in pork chops cut ¾" thick
    2 tsp. black pepper
    1 Tbsp. coriander seeds
    1 Tbsp. kosher salt
    2 tsp. sugar
    6 cloves garlic peeled & thinly sliced
    1 oz. Haggen olive oil

    Preparation

    Combine pepper, coriander, salt and sugar.

    In a baking dish large enough to hold the pork chops in a single layer, sprinkle half the salt mixture and half the garlic.

    Place the chops in the dish and sprinkle with remaining salt mixture and garlic.

    Cover tightly and refrigerate for 2 days.

    Heat the olive oil in sauté pan.

    Brown both sides of chops.

    Place chops in baking dish and bake in 350° oven 10–15 minutes until internal temperature reaches 160°.
